Sandrella's Salmon Croquettes Recipe

  1. Drain and debone salmon, saving salmon juice.
  2. Combine salmon, Large eggs and onion.
  3. Mix thoroughly.
  4. Form into croquettes, using 1/3 c. of mix for each croquette.
  5. Roll and lightly pack salmon in cracker crumbs.
  6. Heat oil to 325 degrees.
  7. Deep fry till golden.
  8. Makes 10 croquettes and serve with Sauce Supreme.
