Turkey, Cranberry and Cheese Panini

  1. Cut bread into 4 pieces, each about 3 inches long.
  2. Split each slice.
  3. Place 2 cheese slices on bread bottoms.
  4. Add 1 turkey slice to each.
  5. Mix cranberry sauce and mustard; spread on each turkey slice.
  6. Replace bread tops.
  7. Spray heavy-bottomed 12-inch skillet with nonstick cooking spray and heat over medium-low heat.
  8. Add panini sandwiches.
  9. Weigh down with another heavy skillet, etc and press down.
  10. Cook over heat 3-4 minutes.
  11. Remove the weight, turn panini over.
  12. Press down again; cook 3 minutes longer or just until cheese melts.
