Cupcakes

  1. Preheat oven to 350F.
  2. Bring Guinness and butter to a simmer over med.
  3. heat.
  4. Add cocoa powder and whisk until smooth.
  5. Cool a bit.
  6. Whisk flour, sugar, baking soda, and salt in a large bowl.
  7. Set aside.
  8. In another bowl beat eggs and sour cream on medium.
  9. Add the Guinness mixture until combined.
  10. Reduce mixer speed to low and add flour mixture - mix just a little then fold until combined.
  11. Fill muffin tin lined with papers with batter and bake approx.
  12. 17 mins.
  13. Cool on a rack.
  14. Heat cream to a simmer.
  15. Pour over chopped chocolate.
  16. Let sit for a min.
  17. then stir gently til smooth.
  18. Addbutter and whiskey.
  19. Stir to combine.
  20. Let this ganache cool a bit.
  21. Using a tsp measuring spoon, take the center out of the cupcakes 2/3 of the way down.
  22. Fill these holes with the ganache to the top of the cupcake.
  23. Whip the butter until light and fluffy- maybe 5 mins.
  24. With the mixer on low, gradually add the powdered sugar.
  25. Combine well.
  26. Add Baileys and mix until light and fluffy.
  27. Frost your cupcakes.
