Light Strawberry Shortcake Loaf
- 14 slices white bread, crust removed
- 5 cups thawed Cool Whip Light Whipped Topping
- 1 pkg. (250g) Philadelphia Light Brick Cream Cheese Spread
- 1 orange zest Safeway 1 lb For $1.28 thru 02/09
- 1/2 cup orange juice
- 1-1/2 cups sliced strawberries
- Line bottom and sides of 8x4-in.
- loaf pan with 8 crustless white bread slices.
- Trim to fit pan, if necessary.
- Beat 1 pkg (250 g) softened Philadelphia Light Cream Cheese with 1/4 cup sugar in bowl with an electric mixer until smooth.
- Stir in 2 cups thawed Cool Whip Light Whipped Topping, peel from 1 orange and 1/2 cup orange juice.
- Add 1 cup sliced strawberries; mix lightly.
- Spoon half the berry mixture into pan.
- Cover with 3 crustless white bread slices; spread with remaining berry mixture.
- Top with 3 additional crustless white bread slices.
- Cover with plastic wrap; refrigerate overnight to let flavour soak into the bread.
- Invert onto serving plate; frost with thawed light whipped topping and garnish with sliced strawberries.
