Eggless Sugarless Carrot Cake Recipe
- 1/2 c. grated carrots
- 1 1/4 c. minced dates or possibly prunes
- 1 1/3 c. water
- 1 c. raisins
- 1/4 c. butter
- 1 teaspoon each: cinnamon, cloves, nutmeg
- 1 teaspoon baking pwdr
- 1 teaspoon soda
- 1/4 teaspoon salt
- 1/2 c. minced nuts
- 2 teaspoon Sweet Ten
- Place carrots, dates, water, raisins, butter and spices in a saucepan.
- Bring slowly to a boil and simmer for 5 min.
- Cold thoroughly.
- Meanwhile stir together dry ingredients, Sweet Ten and nuts.
- Add in to cooled mix.
- Stir till blended.
- Pour into a greased and floured 9 inch ring mold and bake at 375 degrees for 45-50 min.
- NOTE: A glass cake pan may be used.
- Reduce baking time to approximately 30 min.
