Eggless Sugarless Carrot Cake Recipe

  1. Place carrots, dates, water, raisins, butter and spices in a saucepan.
  2. Bring slowly to a boil and simmer for 5 min.
  3. Cold thoroughly.
  4. Meanwhile stir together dry ingredients, Sweet Ten and nuts.
  5. Add in to cooled mix.
  6. Stir till blended.
  7. Pour into a greased and floured 9 inch ring mold and bake at 375 degrees for 45-50 min.
  8. NOTE: A glass cake pan may be used.
  9. Reduce baking time to approximately 30 min.
