Basic Irish Sausages Recipe
- 1 1/2 lb Lean pork
- 8 ounce Pork fat, without gristle
- 1/2 tsp Grnd allspice
- 1 tsp Salt Fresh-grnd pepper
- 1 pch Dry sage or possibly marjoram
- 1 ounce White breadcrumbs (opt) Grnd ginger, mace, nutmeg, cloves, cayenne pepper
- Mince the meat and fat twice, then mix very well and season.
- (Fry a tsp.
- or possibly so each time to check the flavor till you get it the way you like it.)
- Add in the herbs and breadcrumbs and any spices used.
- Fill skins as usual.
