Mango Cherry Pie Recipe

  1. Drain cherries reserving 1/2 c. liquid.
  2. Combine sugar and flour; stir in cherry juice.
  3. Cook and stir over medium heat till thick.
  4. Add in fruits, butter, almond extract and a few drops red food coloring, if you like.
  5. Let stand while preparing pastry.
  6. Line 9" pie plate with pastry.
  7. Fill.
  8. Moisten edge; top with lattice crust, flute edges.
  9. Bake in a very warm oven, 425 degrees, for 8 to 10 min.
  10. Reduce heat to 350 degrees and bake 40 to 45 min longer or possibly till bubbly in the center.
  11. This recipe was originally a peach-cherry pie recipe which I adapted to use with mangoes.
  12. Mangoes can be substituted in place of peaches in many recipes very nicely.
