Zucchini Hash

  1. In a large skillet, heat oil and butter over high heat.
  2. Add zucchini, squash and onion.
  3. Cook until softened and golden, about 10 minutes.
  4. Remove from heat and mix in chives.
  5. Season with salt and freshly ground black pepper, to taste.
