Salmon With Lemon Caper Butter
- 8 tablespoons butter
- 3 tablespoons minced fresh parsley
- 2 garlic cloves, minced
- 2 tablespoons capers, rinsed and drained
- 2 tablespoons grated lemon zest
- 1 teaspoon salt
- 14 teaspoon pepper
- 6 salmon steaks
- 1 tablespoon olive oil
- Preheat oven to 350.
- In a medium bowl, beat butter until soft.
- Add herbs, capers, garlic, lemon zest, 1/4 teaspoon salt, and 1/8 teaspoon pepper.
- Beat to just combine.
- Set aside.
- Brush salmon with olive oil and remaining salt and pepper.
- Bake 15-18 minutes.
- Serve hot fish with cold butter.
