Simple Tom Yum Pho
- 1 as much as you can eat Pho (rice noodels)
- 10 Shrimp (I used Black Tiger)
- 5 stalks Green onions or scallions
- 1/2 Red onion
- 50 grams Bean sprouts
- 1 Straw mushrooms (or brown or white mushrooms)
- 500 ml Water
- 1 tbsp Weipa
- 1/2 stalk Lemon grass (or lemon juice)
- 1 tsp Doubanjiang
- 2 tsp Fish sauce
- 1 Sugar if it turns out spicier than desired
- 1 Cilantro (optional)
- Soak the pho in water.
- De-vein the shrimp and make a cut down the spine (so that it will open up when cooked).
- Chop the green onions or scallions, red onion, and straw mushrooms.
- Make the soup with the ingredients listed under the , add the seasonings, then add the pho and chopped ingredients.
- Garnish with cilantro, then serve.
