kusa bi banadoora (stuffed zucchini cooked in tomato)

  1. cut the top off the zuchinni.
  2. using an apple screw remove the core of all 12 zucchini.
  3. be careful not to break the sides or bottom whilst trying to remove most of the inside
  4. combine meat with rinsed out rice.
  5. add pepper and 1 teaspoon salt
  6. stuff the zuchinni with mince and rice stuffing
  7. cut 2kilos worth of tomatoes into 4s.
  8. and place in a food processor.
  9. you want to turn it into a soup like mixture.
  10. put the tomato soup in a big pot and bring to boil.
  11. finely dice onion and add to soup mixture.
  12. add 2 teaspoons salt.
  13. bring to boil then reduce heat
  14. place the zucchini into the soup mixture carefully and place lid ontop of the pot
  15. allow to cook for 1.5 hours or till rice is completely cooked.
