kusa bi banadoora (stuffed zucchini cooked in tomato)
- 12 zucchini squash
- 2 kg tomatoes (soft)
- 2/3 kg lamb mince
- 1 tsp pepper
- 3 tsp salt
- 2 onion
- 2 cup rice
- cut the top off the zuchinni.
- using an apple screw remove the core of all 12 zucchini.
- be careful not to break the sides or bottom whilst trying to remove most of the inside
- combine meat with rinsed out rice.
- add pepper and 1 teaspoon salt
- stuff the zuchinni with mince and rice stuffing
- cut 2kilos worth of tomatoes into 4s.
- and place in a food processor.
- you want to turn it into a soup like mixture.
- put the tomato soup in a big pot and bring to boil.
- finely dice onion and add to soup mixture.
- add 2 teaspoons salt.
- bring to boil then reduce heat
- place the zucchini into the soup mixture carefully and place lid ontop of the pot
- allow to cook for 1.5 hours or till rice is completely cooked.
