Banana Sour Cream Cake

  1. Soften butter.
  2. Cream butter and sugar until pale.
  3. Gradually add the eggs one at a time beating well after each addition.
  4. Peel and mash the bananas.
  5. Add the bananas and sour cream to the batter.
  6. Sift flour and baking powder together.
  7. Fold into the banana mixture.
  8. Dissolve the baking soda in the milk.
  9. Add to the banana mixture.
  10. Pour batter into a greased and lined 32cm x 22cm roasting dish.
  11. Bake at 180C degrees for about 1 hour or until cake springs back when lightly touched.
  12. when cold, ice with chocolate icing.

  14. Sift icing sugar and cocoa into a bowl.
  15. Beat in the butter.
  16. Add sufficient hot water to give a spreadable icing.
