Stuffed Round Steak Recipe
- 1 1/2 lbs round steak, 1/4 inch thickness
- 1 1/2 c. Italian style breadcrumbs
- 2 Tbsp. extra virgin olive oil
- 1 Tbsp. butter, melted
- 1/4 c. fresh parsley, chopped
- garlic pwdr (for sprinkling)
- 3 Tbsp. Parmesan or possibly Romano cheese, grated
- 1/2 tsp. Hungarian paprika (optional)
- 1/3 c. minced red or possibly yellow onion
- 8 thin slices pancetta or possibly bacon
- Extra virgin olive oil spray
- Cut steak into 8 2X4 inch strips.
- Lightly season the strips with salt, pepper, and garlic pwdr.
- Combine breadcrumbs, melted butter and extra virgin olive oil, chopped parsley, grated cheese and paprika.
- Spread this mix on each steak slice.
- Roll up slice with stuffing mix inside.
- Wrap a slice of pancetta or possibly bacon on the outside of each roll and fasten with a wooden toothpick or possibly tie up with a piece of cotton string.
- Whichever you use, soak the toothpick or possibly string in water for a minute or possibly so before you use it to prevent scorching.
- Spray the rolls with extra virgin olive oil spray (or possibly brush on plain extra virgin olive oil).
- Sprinkle with garlic pwdr.
- Broil the rolls slowly over warm coals till the pancetta or possibly bacon has become crispy.
- If it begins to dry, spray lightly with extra virgin olive oil again during the cooking, being careful of flare-ups.
- Turn frequently till done.
- Garnish with fresh parsley sprigs.
- Serve on buttered and grilled rolls.
- 4 Servings (2 each).
