Confetti Quesadillas

  1. Preheat a large skillet or a quesadilla maker on low.
  2. Line up six tortillas.
  3. Divide all the ingredients except sour cream between tortillas and cover with a second tortilla.
  4. Place each on a dry skillet, warm until cheese begins to melt, about 3 minutes.
  5. Flip and cook 1 more minute.
  6. If using a quesadilla maker, heat each quesadilla about 2 minutes total.
  7. Cut into wedges and serve with a dollop of sour cream.
  8. Garnish with cilantro.
