Lemon Coconut Muffins

  1. Preheat oven to 375 degrees and prepare pans.
  2. Place all-bran& milk in a large bowl.
  3. Stand for 5 minutes until softened.
  4. Stir in egg, oil, lemon juice& rind.
  5. Combine flour, sugar& coconut& stir into wet mix until just moistened.
  6. Spoon into pans& bake for 25 to 30 minutes.
