BBQ Meatballs with Couscous
- 4 gal. water, divided
- 4 qt. couscous, uncooked
- 3 qt. green peppers, chopped
- 3 qt. red peppers, chopped
- 3 qt. ground beef Safeway 1 lb For $3.99 thru 02/09
- 3 pt. dry bread crumbs
- 1-1/2 qt. egg whites
- 1-1/2 pt. fresh parsley, chopped
- 2 qt. OPEN PIT Original Restaurant Recipe Barbecue Sauce, divided
- 1 cup oil
- Bring 2-1/2 gal.
- of the water to boil in large saucepot.
- (Or bring 3/4 cup of the water to boil in medium saucepan for trial recipe.)
- Add couscous and peppers; cover.
- Remove from heat.
- Let stand 5 minutes.
- Meanwhile, mix meat, bread crumbs, egg whites, parsley and 1-1/4 qt.
- of the barbecue sauce (or 2 Tbsp.
- of the barbecue sauce for trial recipe).
- Shape into 1-1/2-inch meatballs.
- Heat oil in large skillet (or in medium skillet for trial recipe) on medium-high heat.
- Add meatballs; cook 7 to 10 minutes minutes or until evenly browned on all sides, stirring occasionally.
- Add remaining 1-1/2 gal.
- water (or remaining 1/2 cup water for trial recipe); cook an additional 10 minutes or until meatballs are cooked through, stirring occasionally.
- Brush meatballs with remaining 3 cups barbecue sauce (or remaining 1 Tbsp.
- barbecue sauce for trial recipe).
- Fluff couscous with fork.
- Spoon onto serving plate; top each serving with 4 meatballs.
