Cashew butter pasta with chicken
- 1 lb dried pasta of your choice (cavatappi, penne, rotini, angel hair...)
- 2 cup green beans
- 1 tbsp olive oil
- 1 lb chicken breasts, cut into bite sized pieces.
- 1/2 shallot, minced
- pinch salt
- pinch pepper
- 3/4 cup cashews
- 1/2 cup room temperature butter
- 1/4 cup shredded parmesan cheese
- Cook pasta according to package directions, adding beans during last 3 minutes of cook time.
- Meanwhile, heat oil in large saute pan.
- Add chicken and minced shallot.
- Season with salt and pepper and cook until golden.
- While the chicken and pasta are cooking, combine cashews and softened butter in food processor and pulse until combined and cashews are finely chopped.
- OR finely chop nuts by hand and mix with butter.
- When chicken is cooked, turn heat to low.
- Add cashew/butter compound and heat through.
- Add cooked pasta and beans, and stir until combined.
- Sprinkle with parmesan and serve.
