Broccoli & Parmesan Appetizer

  1. Preheat oven to 365 degrees F. Prepare 2 rimmed nonstick baking sheets.
  2. In a blender or food processor (I used a food processor), pulse croutons several times.
  3. Add broccoli (drained) and process several minutes to combine.
  4. Add onion, black pepper, and eggs; process until combined, scraping down sides of bowl as needed.
  5. Remove blade and fold in Parmesan.
  6. Using a scoop or spoon, form round balls and place on baking sheet pans in a single layer.
  7. Bake until golden brown, about 15 minutes.
  8. Serve on a platter with some toothpicks.
  9. You can serve these with sauce for dipping, if desiredwe love them plain.
