Bread and Butter Pickles
- 1 lb. sm. cucumbers
- 3 cups thinly sliced onions
- 1/2 cup coarse salt
- 4 cups sugar
- 4 cups white vinegar
- 2 tsp. tumeric
- 3 tsp. mustard seed
- 1 tsp. celery seed
- Scrub cucumbers but do not peel.
- Slice thinly, about 1/8-inch (4 mm.)
- thick.
- Combine cucumbers, onions and salt.
- Cover and let stand for 12 hours, or add 2 trays of ice cubes and let stand for 3 hours.
- Drain well.
- Combine remaining ingredients into a saucepan and bring to a boil.
- Add drained vegetables and bring to a full boil.
- Pack into hot, sterilized jars, covering vegetables with hot liquid.
