Asparagus With Yogurt, Lemon & Chives
- 2 (10 ounce) packages frozen asparagus, cooked in 1/2 cup boiling water for 5 minutes and drained
- 1 tablespoon butter, melted
- 12 cup nonfat yogurt
- 14 cup chives, chopped
- 3 tablespoons lemon juice
- 2 tablespoons breadcrumbs
- 2 tablespoons parmesan cheese
- Arrange cooked asparagus in a shallow baking dish and brush with melted butter.
- Stir together the yogurt, chives and lemon juice and spread over the asparagus.
- Combine crumbs and parmesan cheese and sprinkle on top.
- Bake at 350 degrees for 15 minutes, or until heated through.
- Broil for a few seconds to brown crumbs and serve at once.
