Maple Honey Mustard Glazed Chicken

  1. This recipe requires time to marinate the chicken so be sure to plan ahead!
  2. In a small bowl, combine 1/4 cup olive oil, lemon juice, herbs, salt and pepper.
  3. Rub into the chicken thighs, put them on a platter, cover with plastic wrap and let them marinate in the refrigerator for at least four hours, up to 24 hours.
  4. Preheat oven to 375 F. Butter a baking dish with one tablespoon of butter.
  5. Place chicken in the buttered dish, skin side down.
  6. Bake for 20 minutes.
  7. While chicken is baking, make the glaze.
  8. Combine mustard, maple syrup, honey, and olive oil in a small bowl.
  9. After 20 minutes, remove chicken from oven.
  10. Flip chicken so its now skin side up in the dish.
  11. Spoon glaze over chicken and return to the oven for another 10 minutes.
  12. Then turn the oven to broil for an additional 3-5 minutes.
  13. Let chicken rest for at least 10 minutes before serving.
