Maple Honey Mustard Glazed Chicken
- 1/4 cups Olive Oil
- 1/2 whole Lemon, Juiced
- 2 sprigs Fresh Rosemary, Leaves Only
- 1 sprig Fresh Thyme (Leaves Only)
- 1/4 cups Fresh Chopped Parsley
- Salt And Pepper, to taste
- 4 whole Bone-In, Skin-On Chicken Thighs
- 1 Tablespoon Butter
- 1 Tablespoon Dijon Mustard
- 1 Tablespoon Pure Maple Syrup
- 1 Tablespoon Honey
- 1/4 cups Olive Oil
- This recipe requires time to marinate the chicken so be sure to plan ahead!
- In a small bowl, combine 1/4 cup olive oil, lemon juice, herbs, salt and pepper.
- Rub into the chicken thighs, put them on a platter, cover with plastic wrap and let them marinate in the refrigerator for at least four hours, up to 24 hours.
- Preheat oven to 375 F. Butter a baking dish with one tablespoon of butter.
- Place chicken in the buttered dish, skin side down.
- Bake for 20 minutes.
- While chicken is baking, make the glaze.
- Combine mustard, maple syrup, honey, and olive oil in a small bowl.
- After 20 minutes, remove chicken from oven.
- Flip chicken so its now skin side up in the dish.
- Spoon glaze over chicken and return to the oven for another 10 minutes.
- Then turn the oven to broil for an additional 3-5 minutes.
- Let chicken rest for at least 10 minutes before serving.
