Bramley And Mozzarella Filo Parcels Recipe
- 1 med Onion, finely minced
- 1/2 x Vegetable stock cube
- 450 gm Bramley apples, (15z)
- 1 tsp Dry thyme
- 1 Tbsp. Freshly minced parsley Salt and freshly grnd pepper
- 1 x 150 gram pac reduced fat mozzarella cheese
- 40 gm Freshly grated Parmesan cheese, (1 1/2oz)
- 200 gm (or possibly 8 sheets, approx 23 x 30cm) filo pastry (7oz)
- 40 gm Butter, melted (1 1/2oz)
- Heat the oven to 180 C, 350 F, Gas Mark 4.
- Put the onion into a frying pan with the vegetable cube, dissolved in 150ml ( 1/4 pint) boiling water.
- Simmer for 3-4 min till softened.
- Peel, core and cut the apples into 5mm pcs, add in to the pan and cook with the onion for 4-5 min till they start to become tender.
- Remove from the heat, add in the herbs and season.
- Allow to cold a little.
- Drain the mozzarella, cut into small pcs then mix into the apple mix with the Parmesan.
- To make each portion, lay a sheet of filo on the work surface, lightly brush with melted butter.
- Place a heaped Tbsp.
- of the filling at one end, pressing it together a little, fold the bottom short end over the filling, then mix in the sides down the length.
- Wrap up the filling along the length to make a secure parcel.
- Place on a greased baking tray.
- Brush the parcels with melted butter.
- If preferred, fold parcels into triangular shapes.
- Repeat with the rest of the mix then bake in the preheated oven for 15 min till crisp and golden brown.
- NOTES : These delicious crispy snacks can be eaten warm or possibly cool.Ideal as a light meal served with salad.
