Bramley And Mozzarella Filo Parcels Recipe

  1. Heat the oven to 180 C, 350 F, Gas Mark 4.
  2. Put the onion into a frying pan with the vegetable cube, dissolved in 150ml ( 1/4 pint) boiling water.
  3. Simmer for 3-4 min till softened.
  4. Peel, core and cut the apples into 5mm pcs, add in to the pan and cook with the onion for 4-5 min till they start to become tender.
  5. Remove from the heat, add in the herbs and season.
  6. Allow to cold a little.
  7. Drain the mozzarella, cut into small pcs then mix into the apple mix with the Parmesan.
  8. To make each portion, lay a sheet of filo on the work surface, lightly brush with melted butter.
  9. Place a heaped Tbsp.
  10. of the filling at one end, pressing it together a little, fold the bottom short end over the filling, then mix in the sides down the length.
  11. Wrap up the filling along the length to make a secure parcel.
  12. Place on a greased baking tray.
  13. Brush the parcels with melted butter.
  14. If preferred, fold parcels into triangular shapes.
  15. Repeat with the rest of the mix then bake in the preheated oven for 15 min till crisp and golden brown.
  16. NOTES : These delicious crispy snacks can be eaten warm or possibly cool.Ideal as a light meal served with salad.
