Kuo Fan Gee Chiu

  1. Skin and bone chicken breasts and cut into 1/2 inch cubes.
  2. Place chicken in Marinade and toss to coat.
  3. Marinate for 15 minutes in the refrigerator.
  4. Before stir-frying, add 1 tablespoon oil to chicken mixture and mix well.
  5. Heat 1 cup oil to 375F (190C) in wok or skillet over high heat.
  6. Add chicken and stir-fry for 2 minutes.
  7. Remove and drain well.
  8. Heat 1 tablespoon oil in wok or skillet over high heat.
  9. Add chilis; fry until golden brown.
  10. Add garlic, scallion, bamboo shoots and straw mushrooms.
  11. Stir-fry for 2 minutes.
  12. Add chicken and stir in Seasoning Sauce.
  13. Cook, stirring constantly until sauce thickens.
  14. Serve hot.
