Pepperoni 'n Chive Mini Muffins
- 1 1/2 cups pancake and baking mix
- 1 cup sour cream
- 1/4 cup chopped fresh chives*
- 1/4 cup milk
- 1 Land O Lakes Egg, slightly beaten
- 1/4 teaspoon garlic powder
- 1/3 cup chopped pepperoni
- Heat oven to 400F.
- Spray 24 mini muffin pan cups with no-stick cooking spray; set aside.
- Combine all ingredients except pepperoni in bowl.
- Stir just until moistened.
- Gently stir in pepperoni.
- Spoon batter into prepared muffin pan cups, filling each 3/4 full.
- Bake 15-17 minutes or until lightly browned.
- Cool 5 minutes; remove from pans.
- *Substitute 4 teaspoons dried chives.
