Pepperoni 'n Chive Mini Muffins

  1. Heat oven to 400F.
  2. Spray 24 mini muffin pan cups with no-stick cooking spray; set aside.
  3. Combine all ingredients except pepperoni in bowl.
  4. Stir just until moistened.
  5. Gently stir in pepperoni.
  6. Spoon batter into prepared muffin pan cups, filling each 3/4 full.
  7. Bake 15-17 minutes or until lightly browned.
  8. Cool 5 minutes; remove from pans.
  9. *Substitute 4 teaspoons dried chives.
