Curried Pumpkin Seeds
- 2 cups raw pumpkin seeds
- 2 tablespoons coconut oil
- 1 tablespoon curry powder
- 1 1/2 teaspoons kosher salt
- Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.
- Toss the pumpkin seeds in a large bowl with the coconut oil until well coated.
- Sprinkle with the curry powder and salt and toss to coat completely.
- Spread the seeds in a single layer on the prepared baking sheet.
- Bake, stirring halfway through and rotating the baking sheet, until golden brown, about 20 minutes.
- Serve warm or at room temperature.
