Walnut Pastries

  1. Preheat oven to 180C.
  2. Butter medium baking dish.
  3. Combine walnuts, 25g sugar, egg whites and cinnamon.
  4. Pull out a small handful of pastry (keep the rest covered to prevent drying out).
  5. Lay out in a square on a bench.
  6. Place a spoonful of walnut mixture in centre, fold in sides and roll into cigar shape.
  7. Place in baking dish.
  8. Repeat--don't allow pastries to touch one another.
  9. Brush with butter and bake for 30 minutes.
  10. Meanwhile place remaining sugar, 300ml water, juice and rind in a saucepan.
  11. Stir to dissolve sugar and bring to boil.
  12. Boil for 10 minutes until thick.
  13. Pour syrup over cooked pastries.
