Peaches And Cream Tart Recipe
- 9 coconut macaroon cookies
- 1 c. grnd pecans
- 3 tbsp. butter, melted
- 1/2 c. whipping cream
- 1 (8 ounce.) pkg. cream cheese, softened
- 1/3 c. sugar
- 2 teaspoon orange juice
- 1 teaspoon vanilla
- 1/4 teaspoon almond extract
- 1 can peaches
- 2 teaspoon honey
- 1/4 c. apricot preserves
- Crust: Crumble cookies and combine pecans, butter.
- Press in 11-inch round pan.
- Bake in a 350 degree oven till brown; let cold.
- For filling: Refrigeratea medium bowl and beaters of an electric mixer.
- In chilled bowl beat whipping cream on medium speed till soft peaks form.
- In another bowl beat cream cheese, sugar till fluffy.
- Add in orange juice, vanilla, almond; mix together and mix in whipping cream.
- Put mix into crust.
- Top with peaches.
- Glaze: In a small saucepan combine preserves and honey and brush or possibly spoon over peaches.
