Garlic Zucchini and Tomato Orzo

  1. Bring a large pot filled with 3 to 4 quarts of water to a boil.
  2. Add orzo and boil 8 minutes.
  3. Drain.
  4. Meanwhile, place zucchini, tomatoes, and garlic in a microwave-safe bowl.
  5. Cover with plastic wrap or plate and microwave on high for 3 minutes.
  6. Remove, stir, cover and microwave on high for 1 additional minute.
  7. Remove and add orzo, olive oil, salt and pepper to taste.
  8. Toss well.
