Spicy Vegetarian Peanut Noodle Salad

  1. In a bowl, whisk together the peanut butter, sesame oil, vinegar, chile, sugar, Dijon, coriander and soy until smooth.
  2. Whisk in the canola oil and check for seasoning.
  3. In a large bowl, toss dressing with the pasta, cucumbers, bell pepper and scallions.
  4. Check for seasoning.
  5. PLATING: Serve in large serving bowl.
  6. Garnish with peanuts.
  7. BEVERAGE: Sparkling water with fresh lime and lemon.
  8. Wine suggestion: Villa Maria Sauvignon Blanc 1999
