Mango Tropical Topping
- 6 very ripe mangoes
- 2 limes, juice of
- 1 lime, for decoration
- 2 cups ripe strawberries, sliced (16oz pkg)
- 1 teaspoon sugar
- 1 cup pecan chips (2 oz pkg x2)
- 3 12 ounces coconut flakes (1 can)
- Peel and pit mangoes and place in large bowl-the messier the better.
- Cut firm pieces into small, bite-sized chunks.
- Sprinkle with juice of 2 limes and mix lightly.
- Cover and refridgerate.
- Hull and slice strawberries.
- Sprinkle and toss with sugar or substitite,half teaspoon at a time.Cover and let meld for few minutes at room temperature.
- Mix strawberries into mango bowl.
- Add pecans and coconut and mix lightly.
- Slice lime and place on top as decor.
- Cover and refridgerate.Goes well with Entenmann's All Butter Loaf cake slices or great as a summer treat by itself.
