Shortcut Tuna Pot Pie
- 2 tablespoons butter
- 1 small onion, chopped
- 12 red bell pepper, chopped
- 1 stalk celery, chopped
- 14 cup flour
- 1 cup chicken stock
- 1 cup milk
- 12 cup peas
- 12 cup corn
- 2 tablespoons chopped parsley
- 1 teaspoon chopped dill
- 12 teaspoon mustard powder
- 1 tablespoon lemon juice
- 1 (6 ounce) can tuna, drained and broken up
- 1 (12 ounce) cancountry biscuit dough
- In skillet, melt butter.
- Saute onion, bell pepper and celery.
- Stir in flour and cook 1 minute.
- Gradually whisk in stock, then milk.
- When mixture comes to a simmer, stir in peas, corn, parsley, dill and mustard.
- Reduce heat and simmer 10 minutes.
- Stir in lemon juice and tuna.
- Scrape mixture into a baking dish and lay dough rounds on top.
- Bake at 375 for about 15 minutes.
- Let rest 5 minutes before serving.
