Shortcut Tuna Pot Pie

  1. In skillet, melt butter.
  2. Saute onion, bell pepper and celery.
  3. Stir in flour and cook 1 minute.
  4. Gradually whisk in stock, then milk.
  5. When mixture comes to a simmer, stir in peas, corn, parsley, dill and mustard.
  6. Reduce heat and simmer 10 minutes.
  7. Stir in lemon juice and tuna.
  8. Scrape mixture into a baking dish and lay dough rounds on top.
  9. Bake at 375 for about 15 minutes.
  10. Let rest 5 minutes before serving.
