Rhubarb Primavera
- 3 cups fresh rhubarb, cut into 1/2 inch pieces
- 1/2 cup sugar
- 3/4 cup water
- 2/3 cup sugar
- 1/3 cup shortening
- 1 tsp. grated orange peal
- 1 egg
- 1 cup sifted enriched flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 2/3 cup milk
- Combine rhubarb, sugar, and water.
- Cover and simmer 10-15 minutes until rhubarb is tender.
- Cream second sugar and shortening until fluffy.
- Add orange peel and egg and beat well.
- Sift together flour, baking powder, and salt.
- Add to the creamed mixture alternately with milk, stirring until smooth.
- Add vanilla.
- Pour batter into greased 8x8x2-inch pan.
- Pour hot rhubarb sauce over batter.
- Bake in moderate oven (350F) for 30-40 minutes.
