American Chop Suey
- 8 ounces, weight Macaroni, Or Any Bite Sized Pasta
- 1 teaspoon Olive Oil
- 1 whole Medium Sized Onion, Diced
- 2 cloves Garlic, Minced
- 8 ounces, weight "loose" Italian Sausage
- 1 can Diced Tomatoes (28 Oz Can)
- 2 teaspoons Italian Seasoning
- 4 ounces, weight Fresh Spinach
- 1 pinch Salt And Pepper, to taste
- 1 pinch Crushed Red Pepper, To Taste
- Optional Garnish: Shredded Parmesan Or Romano Cheese
- Prepare the macaroni or pasta according to the package directions.
- Then drain the pasta, rinse it in cold water and set aside.
- Heat the same pot over medium heat.
- Add oil to the pan, then add the onion and garlic and saute until they just begin to turn clear, about 2 minutes.
- Add the sausage and cook until sausage is browned, about 5 minutes.
- Add tomatoes and Italian seasoning, then simmer for about 10 minutes.
- Reduce heat to low.
- Fold in the spinach, and stir and heat until spinach is wilted.
- Taste, and season with salt, pepper, and crushed red pepper as needed.
- Add the macaroni, then serve.
- You can sprinkle on a little Parmesan or Romano cheese if you like.
