Cucumber-Sour Cream Salad
- 1 qt. lime-flavored gelatin
- 1 tsp. salt
- 3 qt. hot water (140 degrees F to 160 degrees F)
- 1/4 cup lime zest Safeway 3 ct For $1.00 thru 02/09
- 1/4 cup fresh lime juice
- 2 cups sour cream
- 2 cups KRAFT MAYO Real Mayonnaise
- 1-1/2 qt. English cucumbers, chopped
- 1/2 cup onions, finely chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1/4 cup fresh mint, chopped
- Mix dry gelatin mix and salt in large bowl.
- Gradually add hot water, stirring constantly until gelatin is completely dissolved.
- Stir in lime zest and juice.
- Refrigerate 1-1/2 hours or until slightly thickened.
- Add sour cream and mayonnaise; mix well.
- Stir in remaining ingredients.
- Pour into 2 full-hotel pans (or into 1 half-hotel pan for trial recipe).
- Refrigerate several hours or until firm.
