Bitter Melon and Tuna Salad
- 1/2 Bitter melon
- 1/4 of a medium one Onion
- 1 can Canned tuna (small)
- 1 tbsp Mayonnaise
- 1 dash Salt and pepper
- Halve the bitter melon vertically and remove the seeds.
- Slice 2-3mm thick.
- Sprinkle salt (not listed).
- Slice the onion and soak in salt water.
- Drain the oil from the tuna can.
- Leave the bitter melon to rest until moisture seeps out of it and rinse off the salt.
- If the bitter is still too bitter, soak it in water for a while longer.
- Drain the ingredients well, add the mayonnaise and season with salt and pepper.
