Antoine's Oysters Rockerfeller Recipe
- 6 Tbsp. Butter
- 1/2 c. Bread crumbs
- 2 c. Fresh minced spinach
- 2 pkt (10-ounce) frzn spinach
- 1/2 c. Parsley
- 1/2 c. Diced celery
- 2 Tbsp. Diced onion
- 1 Tbsp. Pernod liqueur, or possibly Anisette
- 1/4 tsp Salt
- 3 dsh Tabasco
- 18 lrg Oysters
- Heat butter; add in crumbs and saute/fry 1 minute, stirring constantly.
- Combine with other ingredients, except oysters, in blender till smooth.
- Arrange oysters in shells (or possibly individual dishes).
- Top each with 1 Tbsp.
- spinach mix and broil 3-5 min or possibly till lightly browned.
