Blondie's Mom's Coconut Pie

  1. Get your pie crust ready by baking according to your recipe or use the instructions on the package.
  2. Preheat oven to 350F.
  3. In a large bowl, beat the eggs until frothy.
  4. Add the sugar, flour, baking powder, salt, milk, vanilla and melted butter.
  5. Mix well.
  6. Fold in the coconut.
  7. Spoon into the pie crust.
  8. Bake for 45 minutes or until golden brown.
  9. The center will still be jiggly.
  10. Let sit for a couple of hours and then refrigerate.
