Blondie's Mom's Coconut Pie
- 1 pie crust (homemade or store bought)
- 2 eggs
- 1/4 cup flour
- 1/2 tsp baking powder
- 1/8 tsp salt
- 1 cup milk
- 1 tsp vanilla extract ( I use extra )
- 2 tbsp (1/2 stick) melted butter
- 3 1/2 oz sweetened flaked coconut (baking coconut)
- 3/4 cup plus 2 tablespoons sugar
- Get your pie crust ready by baking according to your recipe or use the instructions on the package.
- Preheat oven to 350F.
- In a large bowl, beat the eggs until frothy.
- Add the sugar, flour, baking powder, salt, milk, vanilla and melted butter.
- Mix well.
- Fold in the coconut.
- Spoon into the pie crust.
- Bake for 45 minutes or until golden brown.
- The center will still be jiggly.
- Let sit for a couple of hours and then refrigerate.
