Sausage Upside Down Corn Bread Recipe
- 1 pound bulk sausage
- 1 c. minced onion
- 1/2 c. minced green pepper
- 2 tbsp. flour
- 1 c. tomato paste
- 1 teaspoon chili pwdr
- Salt and pepper to taste
- 4 ounce. cheese in sm. cubes
- 1 c. sliced or possibly minced olives
- 2 Packages corn muffin mix or possibly 1 batch corn bread
- Cook sausage, onion, pepper in skillet till sausage is brown and crumbly.
- Stir in flour, fold in tomato pate and spices.
- Remove from heat; stir in cheese and olives.
- Spread proportionately in a 9 inch square pan.
- Mix up muffin mix or possibly corn bread, spread over sausage mix.
- Bake 30-35 min.
- Let stand 5 min.
- Loosen edges.
- Turn over onto plate for upside down corn bread.
- Serves 6.
