Minestrone With Italian Sausage
- 1 lb mild Italian sausage
- 8 cups chicken broth
- 16 ounces cabbage and carrot coleslaw mix
- 1 large sweet white onion
- 3 stalks celery, chopped
- 2 zucchini, quartered and cut into 1/2-inch pieces
- 28 ounces crushed tomatoes
- 14 ounces cannellini beans, drained and rinsed
- 14 ounces red beans, drained and rinsed
- 14 ounces dark red kidney beans, drained and rinsed
- 1 teaspoon garlic powder
- 2 teaspoons italian seasoning
- 1 teaspoon oregano
- salt and pepper
- 1 cup ditalini
- Brown the sausage.
- Add the cooked sausage and all the ingredients except for the Ditalini into a seven quart crock pot.
- Cook on high for 6 hours.
- Add the ditalini and cook for another half hour.
