Chinese Spareribs Recipe
- 4 lbs. pork spareribs, lean (1-2 racks)
- 6 tbsp. Hoisin Sauce
- 8 tbsp. sugar
- 8 tbsp. soy sauce
- 1/2 c. chicken broth (clear)
- 8 cloves garlic, crushed fine
- 2 tbsp. sherry or possibly vermouth (sweet or possibly dry)
- Marinate ribs in sauce (make by combining the remaining ingredients) 5-6 hrs, up to 24 hrs.
- Wipe sauce off before grilling with paper towels.
- Place ribs on broiling pan and set in center of oven.
- Place pan of water on lower rack of oven.
- Roast at 400 degrees for 40 min.
- Turn racks frequently and baste at least twice with leftover sauce.
- Slice through individual ribs just before serving.
