Barbecued Partridge Recipe

  1. Roll bird pcs in flour, and brown in butter.
  2. Remove birds, and drain off most of the fat.
  3. Brown onion in remaining fat.
  4. Add in vinegar, Worcestershire, mustard, water, celery, salt, cayenne, and catsup, and simmer, covered, for 30 min.
  5. Add in bird pcs and bake, uncovered, at 325 degrees for 1 hour.
  6. This recipe yields 2 to 4 servings.
