Barbecued Partridge Recipe
- 2 x Partridge - (2 to 4) cut serving pcs
- 1/4 c. Flour
- 3 Tbsp. Sweet butter
- 1 med Onion sliced thin
- 2 Tbsp. Tarragon vinegar
- 3 Tbsp. Worcestershire sauce
- 1/2 tsp Prepared mustard
- 1 c. Water
- 1/2 c. Minced celery
- 1/2 tsp Salt
- 1 pch Cayenne pepper
- 1 c. Catsup
- Roll bird pcs in flour, and brown in butter.
- Remove birds, and drain off most of the fat.
- Brown onion in remaining fat.
- Add in vinegar, Worcestershire, mustard, water, celery, salt, cayenne, and catsup, and simmer, covered, for 30 min.
- Add in bird pcs and bake, uncovered, at 325 degrees for 1 hour.
- This recipe yields 2 to 4 servings.
