Smoke Grilled Salmon Steaks With Seafood Rub

  1. In a small bowl combine limejuice, shallot, garlic, peppercorns,
  2. thyme, dill, salt and tarragon.
  3. Cover and store in refrigerator
  4. until ready to use.
  5. Prepare charcoal grill for direct smoking.
  6. Use
  7. one layer charcoal for traditional smoker and place food on middle
  8. grate.
  9. Spray salmon steaks with olive oil spray.
  10. Sprinkle salmon
  11. steaks with equal amounts of rub pressing rub into surface of both
  12. sides.
  13. Season with salt and pepper.
  14. Let rest 10 minutes to marinate.
  15. Place salmon steaks in center of cooking grate of fully smoking
  16. grill or smoker.
  17. Smoke 10 minutes turning once halfway through
  18. grilling time.
