Smoke Grilled Salmon Steaks With Seafood Rub
- 2 tablespoons lime juice
- 1 shallot, minced
- 2 garlic cloves, minced
- 14 teaspoon pink peppercorns, crushed
- 12 teaspoon dried thyme
- 14 teaspoon dried dill
- 14 teaspoon salt
- 14 teaspoon dried tarragon
- 4 salmon steaks
- olive oil flavored cooking spray, for spraying salmon
- 12 teaspoon salt
- 14 teaspoon fresh ground black pepper
- In a small bowl combine limejuice, shallot, garlic, peppercorns,
- thyme, dill, salt and tarragon.
- Cover and store in refrigerator
- until ready to use.
- Prepare charcoal grill for direct smoking.
- Use
- one layer charcoal for traditional smoker and place food on middle
- grate.
- Spray salmon steaks with olive oil spray.
- Sprinkle salmon
- steaks with equal amounts of rub pressing rub into surface of both
- sides.
- Season with salt and pepper.
- Let rest 10 minutes to marinate.
- Place salmon steaks in center of cooking grate of fully smoking
- grill or smoker.
- Smoke 10 minutes turning once halfway through
- grilling time.
