Beignets in New York City
- 1 cup water
- 12 cup kerry irish gold sweet butter
- 1 teaspoon sugar
- 1 pinch salt
- 1 cup sifted all-purpose flour
- 4 eggs
- 1 teaspoon vanilla
- 3 cups oil (for frying)
- Combine water, butter, sugar and salt in a heavy saucepan.
- Heat to boiling.
- When the butter melts, add flour.
- Beat with a wooden spoon over medium heat just until the mixture pulls away from the side of the pan.
- Remove saucepan from heat and beat in eggs, one at a time, until the batter is smooth.
- Beat in vanilla.
- Heat oil in a heavy skillet to 375 degrees.
- Drop batter by teaspoonfuls into the hot oil.
- Brown on both/all sides.
- Remove with slotted spooon and drain on paper towels.
- Keep warm.
- Serve with a warmed jelly sauce of your choosing - apricot, raspsberry, strawberry, grape -- .
