BBQ Turkey Burger with Grilled Pineapple
- - ground turkey (white and dark meat)
- 2 qt. BULL'S-EYE Original Barbecue Sauce
- 3 cups canned roasted red peppers, drained, chopped
- 1-1/2 cups green onions, chopped
- 3/4 cup olive oil
- 1/2 cup minced garlic
- to taste salt and black pepper
- 48 each wheat sandwich rolls, split, toasted
- 48 each leaf lettuce
- 48 each fresh pineapple slices (1/4 inch thick), cored, grilled
- Mix turkey, 1-1/2 cups of the barbecue sauce (or 2 Tbsp.
- of the barbecue sauce for trial recipe), the roasted peppers, onions, oil, garlic, salt and black pepper.
- Shape into 48 patties (or into four patties for trial recipe), about 7 oz.

- For each serving: Cook burger on greased grill 6 min.
- ; carefully turn and brush with 2 tsp.
- of the barbecue sauce.
- Cook an additional 6 min.
- or until medium doneness (165 degrees F); turn.
- Brush with 2 tsp.
- of the remaining barbecue sauce.
- Fill roll with 1 each lettuce leaf, pineapple slice and burger.
