Pineapple Muffins
- 2 cup Flour
- 4 tsp Baking Powder
- 1/2 tsp Salt
- 1/2 cup Sugar
- 1 Egg
- 6 tbsp Milk
- 1/2 tsp Lemon Extract
- 4 tbsp Butter, melted & cooled
- 1 Zest of 1/2 a lemon
- 1 cup Fresh pineapple, cut into 1/4 iinch pieces
- Preheat oven to 375F.
- Prepare muffin tins by lightly greasing each cup.
- Sift together the flour, baking powder, salt and sugar.
- In a separate bowl, beat the egg, milk and lemon extract until frothy.
- Add the butter and lemon zest, combine thoroughly,
- Spoon the batter into prepared muffin tins and bake for 14 to 16 minutes.
