Squash Caviar Russian Vegetable Paste
- 3 Yellow Squashes Or Zucchini
- 4 Tablespoons Oil
- 1 clove Garlic, Minced
- 1/2 Chili Pepper, Seeded And Chopped Finely
- 1 Carrot, Peeled And Sliced Into Circles
- 2 Onions, Peeled And Cut Into Half-moon Circles
- 1 Tablespoon Tomato Paste
- 1 teaspoon Sugar
- 2 teaspoons Salt
- 2 Tablespoons Cider Vinegar

- Preheat oven to 400 F. Wash and slice the squashes into 1/2-inch circles.
- Lay the slices on a greased rimmed baking tray in a single layer.
- Place the baking sheet into the oven and roast for 30 minutes.
- Remove from oven.

- Place the roasted squash into a colander and press on it with a spoon to remove excess liquid.

- While the squash is in the oven, you can prepare the other veggies.
- In a large non-stick skillet heat up the oil, add the garlic and chili pepper and cook over medium heat for a minute.
- Then add the carrot and saute for 2 minutes.

- Next, add the onion, reduce heat to medium-low and cook for 10 minutes until the vegetables are tender.
- Add the tomato paste, sugar, salt and vinegar, mix well and remove from heat.
- 5.
- Put the squash and fried vegetables into a bowl and puree it using an immersion blender.
- Serve cold.
- You will get about 1.5 pint/700 ml of amazing squash paste.
