Shrimp Fra Diavolo

  1. In a metal stockpot begin to saute the garlic and onions in the olive oil.
  2. Saute until softened but not browned about 5 min on med high
  3. Add cans of sauce and crushed tomatoes and stir to blend and reduce heat to medium let it cook about 10 min
  4. Add bay leave, salt,pepper,sugar,Italian seasoning,red pepper and stir.
  5. Cover pot & Turn heat to low!
  6. Simmer 30 min checking heat and stirring
  7. Add tomato paste and stir.
  8. Cover and let simmer while you make pasta and shrimp
  9. Check sauce regularly and stir.
  10. Add extra ingredients if desired.
  11. Bring pot of water to boil for Penne add a pinch of salt.
  12. Drop Penne into boiling water about 10 min to Al Dente
  13. While pasta boils: Saute raw shrimp on high about 5 min until ALMOST DONE!
  14. Slightly raw is good as it will cook in sauce too.
  15. Strain shrimp to remove water and juices.
  16. Add strained shrimp and strained Penne pasta to your sauce and stir.
  17. Cook on low about 4 min for all flavors to absorb and mix.
  18. Let sit 5 min and then serve!
  19. Top with sprinkle of cheese of choice, basil, more red pepper, etc.
