Rise And Shine Pie
- 1 (15 oz.) pkg. fresh hash browns (or if frozen, thawed)
- 1/3 c. butter or margarine, melted
- 1 1/2 c. shredded Swiss cheese
- 1 1/2 c. cooked ham, diced
- 1 1/2 c. shredded Monterey Jack cheese
- 1 c. fresh mushrooms, sliced
- 1/2 c. milk
- 3 eggs
- 1/2 tsp. seasoned salt
- 1/4 tsp. paprika
- 1 Tbsp. chopped parsley
- Place hash browns into greased 9-inch pie pan.
- With fingers, press firmly to form solid crust.
- Brush with butter and bake at 425u0b0 for 25 minutes.
- Remove from oven; reduce oven temperature to 350u0b0.
- Onto potato crust, layer Swiss cheese, ham, Jack cheese, then mushrooms.
- In small bowl whisk milk, eggs and seasoned salt. Slowly pour over pie.
- Sprinkle with paprika and parsley.
- Bake for 30 to 40 minutes or until center is set.
- Remove from oven; let stand 10 minutes before cutting into wedges.
- Makes 4 servings.
