Strawberry-Pina Colada Pie
- 35 vanilla wafers, finely crushed (about 1-1/4 cups)
- 14 cup butter, melted
- 1 (8 ounce) cream cheese, softened
- 14 cup milk
- 1 (3 1/2 ounce) instant vanilla pudding
- 1 (8 ounce) can crushed pineapple in juice, undrained
- 1 (8 ounce) non-dairy whipped topping, thawed, divided
- 14 cup flaked coconut, toasted
- 1 14 cups sliced fresh strawberries
- Mix wafer crumbs and butter until blended; press into bottom and up side of 9-inch pie plate.
- Beat cream cheese and milk in large bowl with mixer until blended.
- Add dry pudding mix and pineapple; beat 2 minute Whisk in 2 cups whipped topping; pour into crust.
- Refrigerate 3 hours or until firm.
- Top with coconut, berries and remaining whipped topping just before serving.
