Grandaddy Railroad Lima Beans
- 1 (12 ounce) bag lima beans
- 2 smoked ham hocks
- 12 cup diced onion
- 12 cup diced bell pepper
- Lawry's Seasoned Salt
- pepper
- 12-1 teaspoon sugar
- 1 tablespoon butter
- water
- Pour the Lima beans into a pot of your choice.
- Rinse and get all the broken and bad pieces out, drain then add ham hocks and enough water to cover the beans and the meat.
- Set the stove top setting on medium high.
- Let beans come to a boil and then add the seasonings, and the onions and bell pepper.
- Continue to let boil for another 5-8 minutes then bring the setting down to medium heat.
- Let cook now for about 30 minutes add water if need to but not too much just enough to cover the beans not drown them with too much water.
- By now the water has turn into bean liquor and now add the butter and the sugar, turn the heat down to low and let the gravy develop.
